I love sweet potatoes. Grilled. Baked. Boiled. Mashed. You name it. I love to eat them alone but I also love adding them to salads! This grain, sweet potato, spinach and feta salad is my idea of a wholesome and delicious dinner. The saltiness of feta plays really nicely with the sweetness of the potato. Not to mention the roasted pine nuts. They add a wonderful earthy flavor and richness to this salad!
Ingredients (serves 4)
400g grain mix
400g fresh spinach
200g feta cheese, cubed
2 sweet potatoes
Handful of pine nuts
3tbsp olive oil
Preheat the oven to 180 degrees. Cook grains according to instructions on the package.
Sauté spinach in 1 tbsp olive oil.
Peel and cut sweet potatoes into cubes. Mix with 2tbsp of olive oil and bake in the oven for about 25 minutes.
Heat a skillet and roast the pine nuts for about 4 minutes over low heat.
Combine all ingredients in a bowl and enjoy!
