Easy speculaas mousse to die for!

Makes 6

Ingredients


2 egg yolks
100ml milk
500ml fresh cream
1 gelatin sheet
20 speculaas cookies (crashed)
1 tea spoon speculaas spices
50gr sugar (or tagatose)

Method
Put gelatin sheet in cold water. Warm up milk and add gelatin to it. Don’t cook! Beat eggs with sugar until fluffy and add to milk. Mix in the speculaas spices and half of the crashed speculaas cookies. Let it cool off.

With an electric beater, whip fresh cream until stiff. Mixing, add the mixture and the rest of the cookies. Place in the fridge for at least 3h. Decorate with some crashed cookies :)
