I am exceptionally obsessed with frozen yogurt lately. Only there is a slight problem, I don’t tolerate lactose. So if I want to eat it, I have to make it myself. Red currant is not my usual froyo suspect but once in a while I do a little challenge to get myself out of my comfort zone and yesterday was one of those days.
First of all, if I can pick any summer fruit, it is usually not the red currant. Second of all, I have green backgrounds and props and I tend to promise myself I will use them one day but for some reason I always end up with another color palette. So voila: red currant froyo styled in green! I consider it mission accomplished. What do you think? Do you like the styling?
200g red currants
600g vanilla soy yogurt
100g tagatose or 100ml honey
Put the yogurt and red currants in a freezer for 30min to 1 hour to chill it. In a bowl, blend all ingredients briefly.
If you have an ice cream machine, pour the mixture in the machine and use according to instruction. Since the ingredients are already chilled, it shouldn’t take more than 15-20 minutes.
If you don’t have an ice cream machine, freeze the red currant for 2h and blend all the ingredients with a mixer. Put it in the freezer for 20 minutes, mix and put in for another 20 minutes or until it has your favorite texture.
