If you visit my blog once in a while, you know I am absolutely obsessed with pancakes. Throughout the years, I have come up with a great number of healthy pancake recipes but this one is by far the healthiest. When I announced to my husband last Sunday that I am planning on making no flour and no milk pancakes, he looked at me doubtfully and said: “Is wheat-free and lactose-free not enough these days anymore?”. It was a pleasure to see him then eat a huge pile of my new delicious invention.
The pancakes are really amazing, if I may say so myself, and they are also wheat-, lactose- and sugar-free (for those of you with food intolerances).
But I have more good news – I am also giving away a BEKA pancake pan which is pretty much another great invention on its own and the best pancake pan that you will own. See below how you can win it!

Ingredients
2 bananas
2 tbsp almond butter
2 eggs
Soy margarine for baking
Method
In a bowl, combine bananas, eggs and almond butter. Mix it with a blender till you have a smooth ‘batter’.
Heat a teaspoon of soy margarine in a non-stick pancake pan. Drop a large tablespoonful of the batter per pancake into the pan to make pancakes about 7.5cm across. Cook for about 3 minutes over a medium heat until small bubbles appear on the surface of each pancake, then turn and cook another 2-3 minutes until golden. Be gentle when you turn the pancake – they are a little softer than flour pancakes.

I recently save a recipe for pancakes only two ingredients: egg and banana. I foundthem so original and easy, but now, if you also add almond butter, I find them even more attractive! Have to try!!
But by far, my favorite pancakes, by those who I’d kill, are those of ricotta with blueberries and some lemon zest. Perfect!
I also make my pancakes with eggs and bananas, but I add coconut flour (wheat- and glutenfree) for consistency. Often I also add cinnamon and apple slices in the batter as soon as it’s in the pan. Delicious
Making pancakes goes along with rock ‘n roll music.
Is there anything more fun than swinging your pancakes in the air on the tunes of Elvis’ Rock Around The Clock? (: I don’t think so!
Thank you for the fun giveaway! The best pancakes I ever had were chai tea pancakes made with freshly ground wheat flour, kefir, eggs, cinnamon, coriander and nutmeg along with 2 oz of strong black tea, served with a cloud of vanilla whipped cream. Heavenly is the word to describe them!

Cheesy but true, baking pancakes in my life almost always go merrily along with being together with friends. We think there’s no better cure to a hangover morning after a rough party night, then baking pancakes all together in our pyjamas in our tiny house in Ghent.
