Who wouldn’t want to be woken up on a Valentine’s morning with these delicious love pancakes? They are absolutely worth getting up 30min earlier on Valentine’s Day! Made with oatmeal and almonds and served with maple syrup, dried blueberries and almond flakes, they are not only heart shaped – they are also good for the heart!
Ingredients
100g oats
70g ground almonds
250ml almond milk
1 egg
Soy margarine to bake
20g almond flakes
Dried blueberries
Maple syrup to serve
Method
Place oatmeal in a food processor and ground it until it turns into a fine powder. Transfer to a bowl and mix with ground almonds, egg and almond milk.
Heat soy margarine in small skillet over medium heat until melted. Use heart-shaped metal pancakes mold and fill it in with batter (you can also use a heart-shaped frying pan). Bake till it’s golden brown on a side and turn. Repeat with each pancake.
Preheat a heavy, ungreased skillet and place the almonds in it. Stir often over medium heat until golden brown.
Serve pancakes hot with almond flakes, dried blueberries and maple syrup!
