Whole-wheat Wraps with Grilled Veggies, Feta & Hummus

Whether you’re looking for a lunch to grab and go or a light dinner, these wraps will make a delicious and easy meal!

 

Ingredients (makes 4)
4 whole-wheat tortillas
1 red pepper
1 zucchini
1 eggplant
125g hummus
100g feta
75g rocket salad

Method
Slice the vegetables and grill them on a bbq, griddle pan or electric grill. Heat a frying pan with no oil and put one tortilla at a time on it for a minute. Spread the hummus on the non-baked part of each tortilla, arrange the rocket salad, grilled vegetables and top with crumbled feta. Wrap and enjoy!
