Ingredients (makes 4)
4 whole-wheat tortillas
1 red pepper
75g rocket salad
Slice the vegetables and grill them on a bbq, griddle pan or electric grill. Heat a frying pan with no oil and put one tortilla at a time on it for a minute. Spread the hummus on the non-baked part of each tortilla, arrange the rocket salad, grilled vegetables and top with crumbled feta. Wrap and enjoy!
