Ladies and gentleman, time to take advantage of this beautiful weather while it lasts and get your BBQs out! Grill some fish and veggies for a delicious summer dinner and use leftovers to make a light lunch for the day after. Leftover shrimp and red pepper? Make this scrumptious salad! You can of course make this salad all year long, just use an electric grill or a griddle pan to grill the shrimp and red pepper!
Ingredients (for two)
300g shrimp
1 red pepper
100g rocket salad
20g pine nuts
2 tbsp sweet chili sauce
150g goat cheese or feta (in cubes or crumbled)
Dressing:
1 lemon
3 tbsp olive oil
1 tbsp honey
Method
Marinate the shrimp with sweet chili sauce and leave for 5 min. Grill for about 3-5minutes.
Remove the core, pith and seeds from the red pepper and slice it up. Grill for about 5 minutes.
Place rocket salad, red pepper, shrimp and cheese in a bowl. In a small bowl, combine the olive oil, honey and juice from one lemon. Mix well and pour over salad. Toss and sprinkle with pine nuts!
