Last weekend was such a blast! Sun, beach, great food and lovely people – life doesn’t get any better that that. I was visiting my sister who lives in Brighton, UK and with weather that perfect, we couldn’t resist to have a barbecue on the beach! Next to some side salads and blueberry cobbler, I decided to make fish Jamie style – wrapped in a newspaper! And it was a big hit! I used Greek sea bass but you can substitute it with almost any white fish or even salmon! I know I will be trying all fish I can find, newspaper wrapped fish is going to become an obligatory part of every barbecue this summer – I can guarantee it!
You will need:
1 whole sea bass, gutted
1 slices lemon, sliced
2 gloves garlic, sliced
A bunch of fresh herbs (coriander, basil, parsley)
Newspaper + kitchen rope
Method:
Stuff the gutted fish with herbs, lemon slices and garlic. Wrap into 2 sheets of newspaper and tie around with the kitchen rope.
Before placing the fish on the barbecue, soak the wrapped fish in water until thoroughly wet.

Grill for about 20 minutes. Before turning to the other side, pour some more water on it. Turn and grill another 20 minutes.

Enjoy before it’s gone!

Sounds delicious., I absolutely LOVE sea bass. I;’ve steamed it in a asian flavors sauce a few times am love the flavor combination but am willing to give this recipe a whirl next time!
