Grapefruit & Honey Yogurt Cups

Full of Vitamin C and antioxidants, pink grapefruits are one of my favorite snacks. When I got a Think Pink bag full of this delicious fruit from Florida Grapefruits, I was really thrilled. I love eating grapefruit on its own but there are actually a lot of other ways to enjoy it. You can use it in salads, cakes or breakfasts. These grapefruit & honey yogurt cups will definitely sweeten up your morning and give you a nice energy boost to start a day.

Ingredients (makes 2)
400g Greek yogurt
1 pink grapefruit
4 tablespoons honey

Method
Pour two tablespoons of honey in each cup. Squeeze juice from half of the grapefruit and peel the other half (make sure you get rid of the skin, it’s the skin that makes grapefruit bitter). Mix yogurt with grapefruit juice and spoon on top of honey. Put a piece or two of the peeled grapefruit on top and enjoy!

    I’m thinking I can do this with ice cream as well? Believe it or not…yogurt isn’t my favorite thing, but honey and grapefruits are! Gorgeous photos as always my dear!

    My boyf loves pink grapefruits, and this is a perfect dessert (or even breakfast!). It’s easy, fast, cute and must be really delicious with a few ingredients!!

    This Christmas, I wanted to make a ping grapefruit marmalade, and I couldn’t. I hope I can make it soon.

    I love pink grapefruits!!!!! I want to make some jam with this fruit, but I haven’t tried it yet. However, this breakfast idea sounds so good, I’m going to take the recipe!

    And, I didn’t remember the pancake day, but, that weekend, we made smarties pancakes!! Like a child, I have not solution!!
