It’s Pancake Day today and in order to celebrate it, I thought I’d share one of my favorite pancakes recipes with you – oatmeal pancakes! They are easy, healthy and delicious, just the way I like it. I love the idea of a Pancake Day but I will not wait for it to make pancakes – actually it’s a little bit like Pancake Day every Sunday in our home. Ricotta, cottage cheese, wholegrain, spelt, with nuts or fruit – I would not be able to count the different types of pancakes I came up with throughout the years!
100g Quaker oats
120g spelt flour
250ml soy milk
8 drops NuNaturals Pure Liquid Vanilla Stevia (optional)
Place oatmeal in a food processor and ground it until it turns into a fine powder. Transfer to a bowl and mix with spelt flour, egg and soy milk (and stevia).
Heat soy margarine in small skillet over medium heat until melted. Scoop the batter onto the pan, and brown on both sides. Serve hot with your favorite topping (our is blueberries and cream or maple syrup).
