Muffin Monday: Orange Date & Hazelnut Muffin

Today is my second week participating in the Muffin Monday and I’m already hooked! How can I not? I finally have a reason to make muffins every weekend and get creative with it too! This week’s basic recipe was the Orange Date Muffin but I was more in a chocolate & hazelnut mood so this is what came out of it ;)


Ingredients (makes 12 muffins)
For muffins
250g whole spelt flour
65g caster sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon grated orange rind
80 ml fresh orange juice
60g butter, melted and cooled
150ml buttermilk
1 egg
100g cup chopped dates
100g cup hazelnuts, coarsely chopped

For chocolate glazing
200g semisweet chocolate chips
2tbsp butter

Instructions:
Preheat oven to 200C and line a 12 hole muffin tin with liners or grease and set aside.
In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
In a bowl, beat together the orange juice, buttermilk, egg and melted butter.
Add egg mixture to the flour mixture. Stir just until combined. Fold in the orange rind, dates and hazelnuts (leave some hazelnuts for decoration).
Evenly divide the mixture among the 12 muffins cups.
Place in the oven and bake for about 15 to20 minutes, or until very lightly browned and a toothpick inserted in the center comes out clean. Place on a wire rack to cool.
In a small pan, melt together butter and chocolate chips. Pour glaze while still warm over muffins and sprinkle with the remaining hazelnuts.

    Lovely to use spelt flour and buttermilk as well – something different to spice up those Monday blues for sure.

    Ooh I love your use of hazelnuts along with the chocolate drizzle. You used spelt flour which I’ve never used before – time to go buy and try it for myself.
