Courgette Lunch Cake

If you’re like me, you are long tired of the same old sandwiches people eat at lunch every day. Don’t get me wrong, I love me some good bread and I do realize that sandwiches are the easiest thing to make, especially when in rush but I think it’s time we all inject some creativity in our lunches! Yes, even if you’re a busy bee like me, with a little foresight and planning, you can have a delicious and exciting lunch without interrupting your schedule.  Let’s start with the courgette cake!  What’s great about it is that you can have it hot and cold, so can make it a day ahead and take it for lunch the next day!  Boring lunches no more!!!
Ingredients 
1 courgette, grated
160g spelt flour (or regular flour)
200g cream cheese
130g grated cheese
3 eggs
30ml olive oil
120ml warm milk
11g dry yeast
Pine nuts

Method 
Preheat the oven to 180C.  In a bowl, mix flour, eggs, olive oil and warm milk. Add yeast and mix again. Add courgette, grated cheese and pine nuts. Gently combine. Grease a squar/rectangular oven dish or line with parchment paper. Pour the mixture, put in the oven and bake for 40-45 minutes.  Serve it on its own or with a simple salad.
