Speculoos Cheesecake In A Jar!

With summer around the corner and the beautiful weather we’re having lately, the only thing that’s in my head is PICNIC! Cakes are a must but they are not always easy to carry,that’s why those adorable (and delicious!) cheesecake jars will make a perfect picnic dessert!

Ingredients :

200g Philadelphia cheese
200g Greek yogurt
40g sugar
40g speculoos cookies
2 tablespoons butter
Handful of strawberries
Mint (for decoration)
4 small jars (I used the 140ml jars)

Method:

Preheat the oven to 130C.
Crush the speculoos cookies with a food processor. Melt butter in the microwave and mix with crushed cookies. Make a cookie layer in each of the jars.
In a bowl, mix cheese, Greek yoghurt and sugar. Divide the mixture between 4 jars.
Place the jars in an ovenproof dish and pour a little bit of water at the bottom of the dish (yes, we’re going to bath-bake our cheesecakes?). Put in the oven and bake for 15 minutes.
Let cool off, top with strawberries and decorate with mint. Close the jars and you’re ready to go! Enjoy!
