Cottage Cheese Pancakes

First of all, sorry for being away for a while. I was not only constantly travelling but we are currently building a house, and we’re in between two houses so my access to kitchen has been limited ;) but I’m back and promise not to leave you for that long again ;)

You all already know that I love pancakes and I love to experiment with them too. This morning, I made cottage cheese pancakes and I am seriously in love with them. They are from today my new favorite pancakes. Try them and I promised you’ll be hooked!


Ingredients

250g flour (I used spelt flour)
200g cottage cheese
150ml milk
3 eggs
1 teaspoon baking soda
Maple syrup
Soy margarine for baking (e.g. Alpro Soya)

Method

In a bowl, mix eggs, cottage cheese and milk. Add flour, baking soda and one teaspoon of maple syrup and whisk until blended.

Heat a small skillet over medium heat, add a little bit of soy margarine and bake on both sides until golden brown.   Enjoy with maple syrup!

    Oh, I love ricotta pancakes too, the texture and taste of cottage cheese pancakes is a little different – just as yum though! hihi x
