First of all, sorry for being away for a while. I was not only constantly travelling but we are currently building a house, and we’re in between two houses so my access to kitchen has been limited
but I’m back and promise not to leave you for that long again
You all already know that I love pancakes and I love to experiment with them too. This morning, I made cottage cheese pancakes and I am seriously in love with them. They are from today my new favorite pancakes. Try them and I promised you’ll be hooked!
250g flour (I used spelt flour)
200g cottage cheese
150ml milk
3 eggs
1 teaspoon baking soda
Maple syrup
Soy margarine for baking (e.g. Alpro Soya)
Method
In a bowl, mix eggs, cottage cheese and milk. Add flour, baking soda and one teaspoon of maple syrup and whisk until blended.
Heat a small skillet over medium heat, add a little bit of soy margarine and bake on both sides until golden brown. Enjoy with maple syrup!

Oh, I love ricotta pancakes too, the texture and taste of cottage cheese pancakes is a little different – just as yum though! hihi x
