I am beyond obsessed with sweet potatoes this autumn. I buy them every time I visit the organic shop and then bake them, cook them, put them in soups, in curry … I just can’t get enough of them! So I just keep coming up with new recipes, and this one is so far one of my favorites!
Ingredients
3 sweet potatoes
200g barley or cereal mixture (I used the Mixture of 4 Cereals – wheat, barley, spelt and rice – from Markal)
150g goat cheese
300g frozen spinach
Handful walnuts
Method
Heat the oven to 180C. Peel the sweet potatoes and cut them in cubes. Put the cubes on a baking tray and toss with olive oil. Roast for about 25-30min until tender.
Boil the cereal mixture (or barley) as instructed on the pack (usually about 20-25min). In the meantime, cook the spinach until thawed and hot. Dry roast the nuts for 3-5 minutes.
Put cooked cereal (or barley) into a salad bowl. Add sweet potatoes and spinach. Crumble the goat cheese over the salad and decorate with nuts. Enjoy!
