CREAMY CARROT SOUP

Rich healthy soup everyone will love! Perfect for lunch or light dinner.  Best served with freshly baked bread!

Ingredients
5 big (organic) carrots
1 onion, chopped
1 tbsp olive oil
1l vegetable stock
Coriander

Method
Peel and chop the onions. Heat the olive oil in a soup pan and fry the onion for 3-5 minutes. Add the carrots and fry for another 3 minutes. Add stock and bring to boil, then reduce the heat and cook for about 25min. Add coriander and mix with a food processor until the soup is smooth. Voila!

    I made this soup for dinner tonight, with the addition of some cauliflower I needed to use up and some cayenne pepper. Delicious, and such a beautiful orange color! Thanks for the inspiration!

    Thank you Jeanette! I try to cook as healthy as possible and making a creamy soup is so easy without cream, you just need to put some more veggies in it :-)

    I made this soup for dinner today!! Initially I wanted to use the “La Cucina Italiana” recipe, but yours was much more practical as you use simple measurements instead of grams! I served it with some shredded cheese and it was great! Healthy and cheap, hehe – we’re trying to save on food a little bit, after all the holidays, and with my birthday approaching. Stano loved the soup too. Did you bake the bread yourself as well?!
